Steak and Potato Baked Eggs – Braai Style

So with tomorrow being ‘braai day’, come Sunday morning there will be LOTS of leftovers. Don’t you find that too? A fridge full of braaied meat, which people nibble on but sometimes it just doesn’t all get eaten.

Well, here’s a ‘the morning after the braai-night before’ breakfast idea: Steak and Potato Baked Eggs – and of course, if you’re like me, you’ll fire up the braai again, and bake these over a fire.

If you are going to cook them on a fire (perhaps if you’re camping), then you will need a cast iron pot large enough to hold your ramekins (I cooked mine 2 at a time), you’ll need a ramekin for each serving, and you’ll need a nice hot bed of coals with some small flames. If you don’t have ramekins, an enamel mug would also work.

Of course, you can also make this perfectly well in the oven – follow the same steps and bake at 200˚C until the eggs are done (of course, you won’t need the cast iron pot).

Either way, the result will be a delicious, rich and creamy meaty base with a perfectly cooked egg on top – the nicest way to have your ‘steak, egg and chips’!

Steak and Potato Baked Eggs

You’ll need per serving:

Diced leftover braai steak (or any other braaied meat)

Diced leftover braaied potato (cooked in the coals wrapped in tinfoil until tender)

1 tsp butter

1 egg

1 Tbsp cream

Salt & freshly ground pepper

  • Mix together the diced steak and potato 
  • Place a layer of the mixture in each ramekin 
  • Put a tsp of butter on top of the meat and potato 
  • Place the ramekins in a cold cast iron pot and place on the fire with the lid on 

 

  • Check regularly – when the butter has melted into the steak and it looks hot and smells delicious, remove from the flames 
  • Break an egg into a cup and carefully slide into the ramekin 

 

  • Grind over the seasonings, spoon on the cream, and sprinkle with a little parsley 
  • Return to the heat with the lid on, until the egg is cooked and done to your liking

  • Remove the ramekins form the pot carefully (we used tongs) and serve 
  • Enjoy!!

  5. WOW! What an awesome way of using up braai leftovers….you clever girl! I must remember this for next time. I used up all our steak leftovers on a fabulous steak ciabatta sandwich for Sunday lunch xx
