Orange and Honey Baked Pork Sausages

I don’t often do challanges or quizzes, just don’t seem to have time, but one of Inspiration’s last challanges really appealed to me (thank you, Tandy, you know how I’ve been needing some sort of inspiration!)

Tandy challanged us to make something savoury using oranges and honey.

Well, yummy idea – what’s not to like about sweet fruity flavours with savoury meat; or at least, that was my take on it.

So for supper on Sunday evening, for which I had scheduled bangers and mash, I made these instead:

Baked Pork Sausages with an Orange and Honey Glaze

1/4 cup of olive oil

4 Tbsp of honey

1 heaped tsp of English mustard

juice of 1 small orange

1 tsp mustard seeds

1 packet of good quality pork sausages (Woollies is my favourite)

  • Set your oven to 180*c
  • Grease an oven-proof baking dish
  • Whisk together all the ingredients except the sausages until well-blended and emulsified
  • Roll each sausage in the glaze to coat them thoroughly, and arrange in the dish
  • Pour the remaining glaze over the sausages
  • Cover with tinfoil and bake for about 20 minutes
  • Remove the tinfoil and spoon the glaze over the sausages – it should be thick and sticky
  • Bake for another 10 minutes until the sausages are golden brown and cooked through
  • Enjoy!

I served these with a baked potato (wrapped in tinfoil and baked in the oven at the same time as the sausages) and steamed green beans in a smidgeon of butter and a squeeze of lemon juice – a perfect light supper.  Couldn’t be easier!

I often bake sausages instead of frying them, I find they come out so much nicer, as the skins don’t split, and of course there’s less clean-up!   Baking them can make the skins tough, though, so cooking them in a sauce of some sort works well.  Sometimes I make a tomato sauce, but this sticky sweet sauce was delicious!  I’ll be adding this to my list of regular easy dishes – thanks, Tandy!!
