Chocolate Weetbix Squares

One of my family’s favourite breakfast cereals (when the kids were teenagers) was Weetbix, those crispy wholewheat ‘biscuits’ which most people like drowned in hot milk, but I love split open, buttered and drizzled with honey.  

As this was a constant grocery cupboard item, one of my tried and trusted, extra-easy recipes was based on this staple.  I remember I got the recipe from a long-lost friend, so many years ago.  

These chocolatey, healthy, crunchie-type biscuits are made in the microwave – so it’s an economical and quick recipe!  I can’t tell you how often this was made by and for kids who were feeling snackish because of long days swimming, or watching movies, or just getting out of doing home-work.

Chocolate Weetbix Squares

1/2 cup of butter

1 cup of brown sugar

1 egg

1 cup of crushed weetbix – crumble finely

1 tsp vanilla essence

2 heaped Tbsp cocoa

1 cup self-raising flour

1/2 cup coconut

  • Melt the butter, stir in the other ingredients, mixing very well
  • Press into a greased square microwave-proof dish, and cook on medium-high (70% power) for 6 or 7 minutes
  • Be careful not to over-cook, the biscuits should be slightly chewy, and if over-cooked they will break your teeth!
  • Cover the biscuits with chocolate glace icing (stir together some icing sugar and cocoa, add enough boiling water to mix to a thick paste),  and cut into squares before they have completely cooled.
